Save water while washing dishes

When washing dishes at the kitchen sink, I need the water to run only while rinsing. But because of the inconvenience of turning the water off and on, I leave the water running even when I don't need it.
I want a pedal that shuts the water off.
I've seen adaptations of medical "scrub room" plumbing, where the user uses a pedal to turn the water ON (see link). However, this requires users to learn how to use an unusual fixture.
I'd like to kitchen faucet to work normally for the uninitiated. Frequent users would learn to use the pedal to interrupt the water flow when the water isn't needed temporarily.
The same fixture could be installed on a bathroom sink for use while shaving.
